Coconut Butter Energy Balls
These no-bake energy balls are packed with healthy fats, fiber, and natural sweetness from coconut butter and dates. They’re the perfect on-the-go snack, post-workout treat, or mid-day energy boost!
Ingredients:
- 1/2 cup coconut butter
- 1 cup rolled oats
- 1/2 cup pitted dates (about 6-8 dates)
- 1/4 cup shredded unsweetened coconut
- 2 tbsp chia seeds or flax seeds
- 1 tbsp maple syrup or honey (optional, for added sweetness)
- 1/2 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp almond meal or oat flour (optional, for texture)
- 1-2 tbsp coconut oil (optional, for extra smoothness)

Prepare the dates: If your dates are a bit dry, soak them in warm water for 10 minutes to soften, then drain. Blend the dates in a food processor until they form a sticky paste. This will help bind the energy balls.

Mix the ingredients: In a food processor, combine the coconut butter, date paste, rolled oats, shredded coconut, chia seeds (or flax seeds), maple syrup (or honey), vanilla extract, and sea salt. Pulse until the mixture is evenly combined. If the mixture feels too dry, add 1-2 tablespoons of coconut oil to help it come together.

Form the balls: Once the mixture is fully combined, use your hands to roll it into small balls, about 1 inch in diameter. If you prefer, you can also press the mixture into a baking dish and slice it into bars.
